During my time at the Jonah’s Restaurants, the company published a monthly magazine called Provoke Lifestyle, which incorporated all the company news, features and articles, including from me for a while. We had a very good PR person called Shyam who did the articles with me and then published, so they are just bits and pieces of me on various topics of hopeful interest, from lying to our guests when we happen to screw up meals, to making a pavlova and in making a good buffet, which does not mean the quality of the dishes, but how we look after them and give all our guests value for money, from the first to the last. Well, from my research, it seems to me that New Zealand made the modern version of the pavlova taken from old British egg white recipes, but it was the Australians who gave the world the “Pavlova” name, named after Anna Pavlova, a famous Russian Imperial ballerina who visited and danced in Australia in 1926, and which now has world wide fame!!!
